Some of my recipes that I have cooked and positively appreciated.

Chicken Curry:

This one of the regular chicken curry with my own twist to it.

  • 1/2 kg of Chicken Breast cut in cubes
  • 500ml of (double) cream or whole milk
  • green chilies to taste
  • 1 or 2 large onions
  • Gram Masala
  •  salt and red chilly powder to taste.

My way of doing chicken curry:

Clean the chicken cubes.(I get fresh cut chicken Breast and clean them and lightly freeze them or defrost them a little and this makes it easy to cut them into cubes)

I then add some gram masala to the cream and very lightly coat the chicken and keep the aside– which would be marinating while I chop the onions and green chilies.

In a large Wok, with some cooking oil,  Fry the Onions till golden brown and then add green chilies and fry them a little and keep all of them aside.

In the same Wok, with hot oil, add just the chicken pieces and fly them lightly (may be for 5 mins) just to start cooking of chicken on the outside… (so when you cut the piece .. it should be pink/ uncooked in the center). then add the pre-cooked onions and green chilies to it along with gram masala, salt and chilly power.  To this I add little water to start off(so milk/cream wont burn off), and then add all cream/milk, and then more water to suit how gravy/ curry you want to suit. I let it cook it for nearly 30-mins with covering the wok. Check in between so that you have enough gravy/curry else add more cream/milk to it. I garnish it with some mint and Coriander/ Cilantro leaves along with Red Chilly flakes.

Curry Done.

 

At times to make the chicken minty, i take a large bunch of mint leaves and grind them with little water to make it paste along with few green chilies and marinate them. And then follow through the same steps.

 

Biryani:

Biryani.. cooked with Double Cream (for 4 people approx) in conventional oven.

 

  • 1/2 kg of Chicken Breast cut in large cubes
  • 500ml of (double) cream or whole milk
  • green chilies to taste
  • approx 250g of mixed vegs (carrot, beans, cauliflower)
  • 1 large potato
  • 1tbs ginger paste
  • 1tbs garlic paste
  • 1 bay leaf
  • cloves
  • Gram Masala
  •  salt and red chilly powder to taste
  • 3 cups of Basmati Rice.
  • Cashew nuts

I first wash the rice, and in the oven proof bowl, and keep it in oven proof bowl.

To it I first i add all power ingredients with the cream and mix it will and then add cut fresh green chilies, double cream, cashew nuts, cinnamon sticks along with any extra water needed.

Pop it covered in to middle/lower rack of the oven for 50mins to 1hr at 250c.

if the ingredients are fresh and nice; neighbors would come knocking. Atleast that was what happened when I cooked this.

For each cup of rice, 1.25 cups of water is needed–which would sometime vary from Rice brand n type of Rice.

Fruity Cake

 

500g mix Nuts & Raisins which are soaked over night or more in your favorite Rum (I used Whisky once)

250g  Cherrys

250g baking flour

250g sugar

250g butter (at room temperature)

4 eggs
